Mochi with pineapple jam filling - Mochi relleno de piña

Easy microwave mochi...



I have been wanting to make mochi for a long time. And a very much feared possible gluten and lactose alergy at home has given me the reason to try them. My first reaction was like: why did I wait so much? This is easy and fun to make, it has a very special taste and texture and you can make all kind of versions. I love everythig about this japanese treat, also the name: mochi!

I decided to try the pineapple filling because it could add a fresh touch to the sweet basic taste of the mochi. I thought also about the colour contrast and that it is a quite dry, easy to handle jam.

The volume of water is always the same as the volume of flour, so you can easily use a cup instead of 
the 200 ml. I checked quite a few recipes and the amount of sugar varied a lot and doest not seem to affect the mochi in other way than in... well... the taste! so adjust according to your liking. I find this amount of sugar was not too sweet, perfect for the pineapple filling.

Ingredients:
  
For the pineapple jam:
You will not need all of it for the mochi. It is delicious just on toast, with yogurt...
4 slices of fresh pineapple
1 tbs. light brown sugar
1 tsp. vanilla sugar (optional, using vanilla sugar is my personal OCD I put it in everything)

For the mochi:
200 ml. sweet rice flour (glutinious rice flour)
200 ml. water
100 ml. sugar 
Some corn or potato starch to roll the mochi
Coconut and sesame to sprinkle


1. Make the jam ahead so it is cold when you use it for the mochi. Remove the skin an cut in small pieces. Put it in a deep pan on medium heat and add the sugar. Let it simmer for about 20 min. while you stir it from time to time so it does not burn. Then blend it until it looks like a thick jam and cook it for about 10 more minutes or until thick and golden.

2. To make the mochi, mix the flour and the sugar. Add the cold water and just stir with an spatula until disolved. Make sure there are no clumps. 

3. If you want to colour the mochi you can use some drops of your favourite colour or some natural food colouring. I put half of the mochi mixture in a deep plate to make some white mochi. Then I made the other half look pastel using 1 tsp. of blackberry powder and I put it in another deep plate.

4. Cover the plates with plastic wrap and keep them covered while they are in the microwave.

5. Now, the only way you can ruin your mochi is if you give them too high temperature in the microwave. Mine does not show the temperature, it only has a stupid system of drops and plates that somehow I have managed to live with. This might actually be the first time I cook in it... 
Other recipes call for different temperatures so I suggest you just try starting with a low-medium temperature for one minute. If nothing changed, give it a bit more of temperature and a minute more. Mine took five minutes, four of them at medium temperature and the last one al low temperature so the center would me ready without drying the outer part too much.

6. Leave the mochi to cool while you prepare the the surface you are going to work on and find the jam and the sprinkles. Put some water in a small plate to dip the mochi in before you roll them in the coconut or sesame. Put the jam over a sieve so the liquids run out, we want a dry filling. Find a knife with a non serrated edge.

7. Sprinkle a working surface with the starch, and be generous about it! Have all the things you need around you. 



8. Use a spatula to loosen the ends of the mochi paste and then just tear it off the plate and put it on the working plate. Roll it a bit in the starch.

9. Cut a small amount of the paste and put some starch on your hands. Put the mochi in the palm of your hand and flaten it with your fingers while you carefully strech it a bit.





10. Take a bit of your filling making sure that it is quite dry. Close the mochi carefully. If some of the liquid of the jam comes out it will be difficult to close it. When it is closed, roll it in the palm of your hand giving it a round form, as good as you can...






11. Dip the mochi in the plate with water and the in the coconut or sesame. 

12. Enjoy with some green tea!

Llevo tiempo con ganas de probar a hacer mochi y ahora una posible doble alergia al gluten y la lactosa en casa :o( me han dado la excusa perfecta para decidirme a hacerlos :o)
Mi primera reacción fue ¿Por qué he esperado tanto a intentar hacerlos? Esta receta es tan fácil como divertida, tiene un sabor y textura muy especial y se pueden hacer todo tipo de versiones. Me encanta absolutamente todo sobre esta receta, incluso el nombre: ¡mochi!

Ya tenía pensado de antemano el relleno de piña porque me parecía que podía ser un contraste fresco al dulzor básico del azúcar y el arroz, que son los ingredientes de los mochi. Además pensé en el contraste de colores y por último en que se trata de una mermelada bastante seca, fácil de manejar para el relleno.

Muy importante destacar que no se puede hacer con harina de arroz normal, tiene que ser harina de arroz glutinoso, también llamada arroz dulce. Se encuentra en tiendas de productos orientales. En cuanto al azúcar, se puede variar la cantidad dependiendo de nuestro propio gusto. Esta cantidad da un resultado dulce sin empalagar, creo yo...

Ingredientes:

Para la mermelada de piña:
Te sobrará bastante de esta cantidad. Está deliciosa simplemente con pan, con yogurt...
4 rodajas de piña natural
1cucharada de azúcar moreno
1 cucharilla de azúcar avainillado (es una obsesión personal lo que tengo yo con la vainilla...)

200 ml. de harina de arroz glutinoso (arroz dulce)
200 ml. de agua
100 ml. de azúcar
Un poco de maicena
Coco rallado o semillas de sésamo para espolvorear los mochis

1. Prepara la mermelada de antemano para que esté fría para hacer los mochis. Pela las rodajas de piña, córtalas en daditos y ponlas en una olla a fuego medio. Añade el azúcar y deja unos 20 minutos removiendo de vez en cuando y ajustando la temperatura si es necesario. Entonces pásala por la batidora hasta que tenga la consistencia de una mermelada espesa y ponla de nuevo al fuego unos 10 minutos más.

2. Para preparar los mochi, mezcla la harina con el azúcar y añade el agua. Remueve bien con una espátula y asegúrate de que no queden grumos.

3. Puedes hacer mochi de colores añadiendo tu colorante favorito. He hechado la mitad de la mezcla en un plato hondo para hacer unos mochi blancos. A la otra mitad le he añadido una cucharilla de moras en polvo para conseguir un tono rosa palo, porque es el colorante natural que tenía en casa...

4. Cubre los platos con film transparente y déjalos cubiertos mientras están en el microondas.

5. La única forma de estropear completamente unos mochi es quemándolos en el microondas, te puedes imaginar cómo lo sé :o/ En mi microondas no puedo ver la potencia a la que caliento, solo tiene un ridículo sistemas con gotas o platos al que de alguna forma me he acostumbrado. De hecho, con esta receta es la primera vez que uso el microondas para cocinar. Las distintas recetas que he mirado dan distintas potencias así que te aconsejo que experimentes con cuidado: pon el plato cubierto con el film en el microondas y dale un minuto a una potencia baja, si no pasa nada ajusta la potencia y dale otro minuto. De esta forma vas controlando sin que se pase. A mí me llevo 5 minutos: cuatro a potencia media y el último a baja potencia para que se haga el centro.

6. Deja que la masa se enfríe solo un poco mientras preparas el resto de cosas. Espolvorea la supeficie donde vayas a trabajar con maicena. Pon un poco de la mermelada en un colador para que pierda algo de humedad, queremos un relleno bastante seco. Busca el coco rallado y el sésamo. Prepara un platito con agua para mojar los mochi un poco. También necesitarás un cuchillo que no tenga el filo dentado.

7. Con una espátula separa la masa de mochi del plato y después estira hasta que se separe por completo. Déjalo caer sobre la supeficie enharinada y pásalo por el harina un poco hasta que toda la masa esté cubierta. 

8. Asegúrate de que tienes todo lo que necesitas a t alrededor. Corta una pequeña porción de la masa. Enharinate las manos con maicena. Pon el trozo de masa en la palma de tu mano y aplastalo con las yemas de los dedos mientras la estiras con mucho cuidado. 

9. Pon sólo un poquito del relleno en el medio de la masa que tienes en la mano y cierra el mochi con mucho cuidado. Si algo del líquido del relleno sale para afuera seré bastante difícil cerrarlo. Cuando esté cerrado intenta darle forma de bola lo mejor que puedas entre las manos.

10. Moja la parte de arriba del mochi en el plato con agua y reboza en el coco o sésamo.

11. Sírvelo con una taza de té verde y disfrútalos.
